GARLIC BRAAI BREAD

  GARLIC BRAAI BREAD:   Ingredients: 1 baguette, about 40 cm long 1/4 cup butter, softened. 2 cloves garlic, minced. 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 cup grated Cheddar/Parmesan cheese   Instructions:   1.     Preheat your grill or oven to medium heat. 2.     In a small bowl, combine the butter, garlic, salt, and pepper. 3.     Spread the garlic butter mixture all in cuts made about 2cm apart and 3/4 through or over the baguette, making sure to get into all the nooks and crannies. 4.     Sprinkle the Parmesan cheese over the top. 5.     If you are grilling the bread, wrap in aluminum foil and then place it on the grill directly over the heat. Grill for 5-7 minutes per side, or until the bread is go lden brown and the cheese is melted and bubbly. 6.     If you are baking the bread, wrap it in aluminum foil and bake for 10-12 minutes, or until the bread is heated through and the cheese are melted and bubbly. 7.     Serve hot and enjoy Tips:   For a more intense garlic

PUMPKIN CAKES

 

PAMPOENKOEKKIES MET KANEEL EN SUIKER OF KARAMEL SOUS

PUMPKIN CAKES

 

INGREDIENTS:

450g peeled pumpkin cubes.

Pinch of salt

60g cake flour

5ml baking powder.

2 eggs

45ml sunflower oil

45ml butter

Cinnamon sugar

100g of sugar

5ml cinnamon

Milk (optional if batter too thick)


 INSTRUCTIONS:

1) Cook the pumpkin in a vegetable steamer or pot with the salt until cooked.

2) Puree the pumpkin and mix it with the cake flour, baking powder and eggs to form a runny batter.

3) Add a little milk if the batter is too stiff.

4) Heat the oil and butter in a thick pan.

5) Fry spoonsful of the batter in the hot oil

6) Place the pumpkin cookies on paper towels to absorb all oil.

7) Mix the sugar and cinnamon and sprinkle the pumpkin cookies with it.


 TIPS:

If the batter is too fine, add a little milk.

If too mushy add some flour

It can also be enjoyed instead of the cinnamon and sugar with a caramel sauce, (caramel sauce recipe below)

Serve hot.

Pumpkin cookies can also be enjoyed with syrup, honey, cream, ice cream or chocolate sauce.


 CARAMEL SAUCE:

250 ml of cream

125 ml of sugar

50 g of butter

5 ml caramel flavoring

Pinch of salt


 INSTRUCTIONS:

1) Dissolve the sugar in the other ingredients and cook for 5 minutes, stirring constantly.

2) Allow to cool slightly to thicken.

3) Spoon the caramel sauce over the pumpkin cookies.
